I am in such a cranberry mood. I love cranberries in all their forms, but I love adding dried cranberries to practically everything- stuffing, cookies, and best of all, Cupcakes.
Lemon Cranberry Cupcakes
1 box Lemon Cake Mix – Yes, I take the easy way out sometimes
1 C Sour Cream or Plain Yogurt
1/3 C Vegetable Oil
3 Large eggs
1 T Lemon Juice
1/2-3/4 C Dried Cranberries
Preheat oven to 350*
Prepare Cupcake Batter – Mix all ingredients in a mixing bowl on low for 30 seconds, then medium for another 2 minutes or so, making sure to scrap down the sides of the bowl periodically. Scoop about 1/3 of a cup of batter into papered or prepared muffin pan. Bake about 17 minutes.
Creamy Lemon Frosting
3T Butter, room temperature
3 oz Cream Cheese, room temp
2 C Confectioner’s (powdered) Sugar, sifted
1 t Lemon Juice
1 t Lemon Zest
Cream Butter and Cream Cheese together til fluffy. Add the sugar, lemon and zest, and whip til light and fluffy. Spread on cooled Cupcakes, and sprinkle with a few extra cranberries…enjoy!
