Are you noticing a theme here? It seems I have a thing for EASY recipes. I don’t deny that at all – but when a recipe is THIS good? Simple is better. I learned this from a friend, and it’s been one of my husband’s favorites. It’s NOT the healthiest dish, but you can make modifications to make it a little healthier. A little butter goes a long way!

Rustic Potatoes
- 6-8 medium RUSSET potatoes, scrubbed, and diced or sliced thin
- 1/2 stick of butter diced, or 1/4 c of olive oil, or any combination of the two
- one yellow or white onion, diced
- salt & pepper
- seasoning salt, other seasonings (optional)
Preheat oven to 350*
To assemble, layer a 2 quart baking dish with potatoes, onions, butter/olive oil, salt & pepper/other seasonings, and repeat 2 times for a total of 3 layers. Alternatively you can just put all the ingredients into a bowl and toss. Bake 20-30 minutes, remove from oven to gently toss, then bake another 20 minutes. Potatoes should be VERY tender. You can also microwave for 20-30 minutes on high, stirring half way through.

It’s one of those dishes you can’t really mess up. I like to bake it a little longer to get that nice roasting on the potatoes, but it’s just as yummy either way! It’s great with a little minced garlic, rosemary, cajun seasoning…You could even do this in a crock pot!
